Keto Taquitos

Just in time for Cinco De Mayo! I’m bringining you a simple, low carb option for fried taquitos. These are just as tasty as your typical store-bought taquito, only healthier! With just a few ingredients, you can whip these up in a jiffy.


  • Low carb street taco tortillas (however many you want to eat)
    • I usually order from These are cheap and excellent tasting tortillas and I use them almost every other day
  • Avocado/Olive oil
    • Just enough to fill the bottom of a sace pan for frying
  • Some kind of cooked protien, I choose chicken
  • Cheese of any kind
  • Guac, sour cream, pico, queso…. anything you like to dip your taquito in
  • Toothpics to hold them together


Start by getting the desired amount of tortillas and warming them in the microwave. I find it easier to roll this way. Once warmed, put on a plate and fill the inside with cheese and protien.

Don’t over-stuff them or you’ll have a mess. Gently roll them tight without tearing the tortilla and pin closed with a toothpick. Repeat this step until all of your desired taquitos are rolled.

In a medium sized sauce pan, heat up your oil. I kept mine on medium heat and it worked out just fine. It only took a few minutes to warm up so I waited to get the oil ready until I was done rolling.

Once your oil is at temp, gently place a few of your taquitos into the oil. Keep an eye on them as it doesn’t take much time on each side. At the halfway point, I removed the toothpick so it sat down in the oil when I flipped. Fry until your desired crispsness. Remove from oil and place on paper towl.

Plate and enjoy! Add your favorite compliment side! Happy Cinco De Mayo!

Keto Fudge

Just in time for Christmas, here’s a holiday favorite, of course Keto. It’s so simple to make and fully customizable!


  • 1 cup Keto approved chocolate chips
  • 1 cup heavy whipping cream
  • 2tbs grass fed butter
  • 1/3 cup Keto powdered sweetener
  • 2tsp vanilla
  • Handful any nut of choice


In a decent sized frying pan, combine your butter, sweetener and heavy cream in between medium and low setting. This needs to be stirred continously to keep the ingredients from burning. Keep stirring for about 15 minutes until the mixture is good and thick.

Once your done thickening your mixture, remove from the heat and set aside about 5 minutes. Dump your cup of chocolate chips into the mixture and get to stirring again.

In a 9×9 square pan, line with parchment paper. Pour the hot fudge into the pan and even it out. Garnish with whatever nut you choose.

Place pan in fridge for no less than 1 hour. I did 2. Remove, slice and enjoy. These need to be stored in the fridge as they start to melt quickly because of the Butter.

Keto Candied Pecans

It’s that time of year for holiday sweets once again. Here’s an old fave, Keto of course. It’s one of those minimal effort treats with max rewards. FYI……. These are highly addictive!


  • 2 cups pecan halves
  • 5tbs Keto approved brown sugar
  • 1 egg white
  • 1tbs cinnamon
  • Pinch Pink Himalayan salt


In a small bowl, add your brown sugar and cinnamon. Mix well until combined. Set aside.

In another bowl, add your egg white. With your hand mixer, whip your egg white until they firm stiff peaks.

Dump your pecans and 1/2 of your sugar mixture. Mix well and then add your other half of sweetener mixture. Get your pecans nice and coated.

In a parchment lined cookie sheet, dump your coated pecans and evenly spread them out. Place in your over at 250 degrees and cook for 45 minutes. Take them out every 15 minutes and toss them around. Once finished, let cool and enjoy. Try not too eat them all at once!

Keto Pecan Pie Fat Bombs

When you need that extra fat punch or you just have that sweet tooth, having fat bombs on hand are a must. These Keto pecan pie fat bombs do just the trick. Loaded with the necessary good fats and low on carbs, they are a fantastic treat. Best of all, it takes less than 20 minutes to prepare. Great taste and very satisfying!!

Ingredients (Yields 9):

  • Pecans – 6 tbs chopped
  • Granulated monkfruit sweetener – 2 tbs I use this from Amazon –>
  • Almond Flour – 6 tbs
  • Softened (not melted) grass fed butter – 4 tbs
  • Vanilla – 1/2 tsp
  • Liquid stevia drops – 1 or 2 drops (this is potent, be careful) I use this brand off of Amazon —>
  • Cinnamon to top

Nutrition facts per 1 fat bomb:

1 net carb; 10 g fat; 1 g protein; 104 calories


In a mixing bowl, add all of your ingredients. Mix either by hand or hand mixer until all ingredients are mixed well.

Place your bowl with your mixture in the freezer for 10 to 15 minutes to help them set up.

Once your timer has gone off, roll out your fat bombs into balls. I used a 1 tbs measuring cup because my scoop was too big. If you have a smaller cookie scoop, use that. Repeat until all of your mixture is rolled. Take each fat bomb and roll over the leftover chopped pecans (if desired).

Plate your fat bombs and sprinkle with cinnamon if desired. Put them back into the freezer to firm up again. Place in an air-tight container and you can put in the fridge for about 3 days. Enjoy!

Keto MilkShake

Obvioulsy you can’t just go to your favorite drive thru and order a milkshake. But that’s ok because this one will make you forget all about those. This delicacy is a must. Whether it’s a mid day snack or late night munchie, it has a perfect macro and the calories won’t blow you away at all. And it’s simple with only 2 needed ingredients that you don’t have to prepare.


  • Atkins Milk Chocolate Delight protein shake (these are perfectly balanced. you get them at Walmart and they are only $4.98 for a 4 pack)
  • Ice Cubes

Yeah, really, that’s it. Of course, you can add things like Keto approved chocolate chips if you want or maybe a Keto cookie, just watch your calories.


In your blender or mix cup, add your ice cubes. Fill with the protein shake. Blend until smooth. If you want thicker, add more ice. Thinner, add more shake or reduce the ice next time.

It’s that simple. Now go make one and enjoy!

Keto Air Fried Sausage Balls

Do you have Keto friendly snacks around when you have that need for a snack? These are so simple to make and they are super Keto friendly. Best of all, there are 0 carbs in this recipe. Eat them hot, eat them cold, but I can assure you they won’t last. This would be a great appetizer for a party too. Nobody would even know they are Keto!


1 lb breakfast sausage; 1 cup crushed pork rinds; 1/2 cup natural shredded cheddar cheese; 1/2 cup monterey jack cheese; 1 large egg; 8 oz softened cream cheese; seasonings of choice; air fryer or oven


1st and foremost, you need to ensure your cream cheese is softened. Dump all of your ingredients into a bowl. No particular order, just dump it all in there.

Mix all of your ingredients until it’s uniform. You can use your hands, a spoon, or paddle mixer. Whatever works for you!

Using an ice cream scoop, scoop out your mixture into even balls. I choose an ice cream scoop because it makes even, uniform balls.

Place your sausage balls into your preheated air fryer and cook at 375 for 30 minutes. You can use the oven with the same settings but at least the air fryer doesn’t heat up the house.

Once your timer goes off, remove from air fryer/oven and place on counter to cool down. Place in an airtight container and store in the fridge.
