Keto Jambalaya

Wow, just wow. This takes me back to the time I spent in Louisiana. There is no replacement for authentic Cajun food, but this was damn close. You choose what protein you want to put in there, but if you want to do it right, you put the sausage, chicken thigh and shrimp in there. These flavors marry together so well. Get ready for this flavor bomb! Did I mention, 100% Keto friendly? Oh yeah, that it is!

Ingredients:

  • 1 tablespoon olive oil
  • 10 ounces shrimp, peeled and deveined
  • 3 teaspoons Cajun seasoning 
  • 12 ounces chicken thighs, cut and cubed
  • 12 ounces Andouille sausage, sliced
  • 2tsp minced garlic 
  • 1 sweet pepper (or more); I use yellow, cut into thin strips
  • 1 sweet onion 
  • 7tbs heavy cream
  • cauliflower rice

Instructions:

In a decent sized frying pan, add your olive oil, shrimp and 1tsp of the Cajun seasoning. Cook the shrimp until opaque. This should only take a few minutes. If you use frozen, it may take a little longer. Once cooked, remove and place to the side.

In the same pan, add your cut up chicken and sausage and 2tsp of the Cajun seasoning. Cook for 5-8 minutes or until the chicken isn’t pink anymore. Remove chicken and sausage on dish to the side.

Again, in the same pan, add your 2tsp minced garlic. Sauté for 30-45 seconds on medium/high heat. After that time is up, add in the peppers and onions and another tsp of the Cajun seasoning. Cook the peppers and onions until they are soft and tender.

Once your peppers and onions are tender, add in your 7tbs of cream. Keep the heat on medium/high, continually stirring, for about 2 to 3 minutes until the cream thickens. Once it thickens, reduce heat.

Throw in all of your meat and let simmer for 5-7 minutes. You will need to stir often and ensure all the chicken, sausage and shrimp are coated in the thickened sauce.

Once done, prepare your plate with a bed of cauliflower rice. Spoon out a generous helping of Jambalaya onto the rice and enjoy.

Loaded Baked Cheesy Cauliflower

Ingredients:

  • 1 Large head cauliflower
  • 1 Cup mayo
  • 1 cup powdered parmesan
  • Bacon crumbles
  • Cheddar cheese
  • Pepper
  • Garlic powder
  • Paprika

Instructions:

Prep your cauliflower head. Remove the leaves and butt from the bottom. Don’t cut too deep, you need the head to stay in tact.

While you are prepping your cauliflower, start boiling a pot of water stove top. It needs to be deep enough to cover the entire head. Once the water is boiling, place the head in the water and boil for 6 minutes. Remove from the water and place on a baking sheet lined with foil. (It’s gonna be hot!!)

In a bowl, let’s prepare the topping. Add your 1 cup of mayo, 1 cup of parmesan, pepper and garlic powder, mix well until blended.

Now let’s smother the cauliflower with the topping. Coat the entire outside using the entire contents of the bowl. Put it on nice and thick. We used a rubber spatula and it spread very easily.

Once you are coated, top with bacon crumbles, add some paprika and pop her in the oven. You will bake for 15-16 minutes at 375 degrees.

At the end, pull it out and sprinkle a bit of cheddar on top if you desire. Pop back in a minute or 2 to melt. Once done, pull out and enjoy. It’s fantastic!

Keto Tortillas (the real deal)

Ok, some times cheese shell tortillas just don’t cut it. In my quest to find an easy, quick and tasty tortilla recipe I found this gem. Not my recipe but adding steps here to share. It’s extremely easy to make and the results were out of this word! These are rather small so adjust for whatever size you like. I would say these are about the size of street tacos.

Ingredients:

  • 1 cup almond flour
  • 3 tbs coconut flour
  • 2 tsp xanthan gum… I buy here on Amazon —> https://amzn.to/36bAce1
  • 1 tsp baking powder
  • 1/4 tsp kosher salt
  • 2 tsp apple cider vinegar
  • 1 egg, beaten
  • 3 tsp water

Instructions:

Break out the food processor. In the processor, put your almond flour, coconut flour, xanthan gum, baking powder and salt. Pulse until they are all mixed. Should only be about 10-15 seconds.

Once your dry ingredients are mixed, pour the apple cider vinegar in with the processor running (ok, so I just took the lid off and dumped in, it works). Once it has evenly mixed, do the same thing with your beaten egg and then the water. Once the dough is in a ball, you are done.

Remove from the processor and place in some cling wrap. Roll into a ball and knead for a few minutes. Once you are done kneading, place into the fridge for about 10 minutes to set-up.

Remove from the fridge and divide into 8-9 1″ balls. Place each ball between 2 sheets of parchment paper and press with a bowl bottom, a rolling pin, or whatever you want to shape them. These are about street taco size so if you want bigger, then you need to make bigger balls. Ideally, you use a tortilla press, which I don’t have, so I used the bottom of a bowl.

When ready to cook, place your pan on the stove-top on medium-high. Throw the tortilla on and cook for only about 10 seconds on the first side and about 20 on the 2nd. Each persons cook time will be different, just watch them. They brown up quick. You can use a cast iron skillet, I was just worried they would stick but after making them, I think it would be fine.

Starbucks Pink Drink

Do you love Starbucks? How about their Pink Drink? Well, this passion tea is great but it’s even better made the Keto way. You only need a few simple ingredients and you have imitated this exact drink. Best of all, it’s only 50-100 calories depending on how much heavy cream you use. This is not my recipe but a well known one.

Ingredients:

  • 5 tea bags of Tazo Passion Tea (you can find at Kroger but it’s cheaper on Amazon and it’s on sale right now.. find it here–> https://amzn.to/3irH9dL
  • 1 or 2 tbs Heavy cream. I prefer 1, it’s just right. And I use the dairy free HWC but feel free to use traditional
  • 1 or 2 squirts of liquid sweet leaf vanilla. This is my favorite you can find on Amazon here –> https://amzn.to/3ahtiUv
  • 2 pumps of SF Keto approved vanilla syrup. We love this Torani brand you can find here —> https://amzn.to/2XN2eHX but you can use whatever brand you desire
  • Ice cubes
  • 1 or 2 strawberries diced (optional)

Instructions:

Put 2 cups of water in a microwaveable safe bowl/cup. Microwave for 2 minutes. Remove and put 5 tea bag inside and allow to steep for a few minutes. It’s ok to raise and lower in the water releasing all of the passion flavor.

Transfer contents to the pitcher.

In the same bowl/cup, put the 5 bags back in there and refill with 2 more cups of hot water from your sink water (or microwave again). You will repeat this 2 times for a total of 6 cups into the pitcher. You will know that on the last time the water doesn’t change pink that you have used all of the tea flavor from the bags.

Fill your cup with ice

Add your 2 squirts of sweetener

2 pumps of your vanilla syrup and HWC

Pour your tea and give it a good stir

Enjoy this low calorie Keto Pink Starbucks drink! Don’t be scared to try different flavor sweet drops or syrups. It’s ok to experiment!
