Keto Cranberry Sauce

Don’t forget the cranberry sauce! If you’re like me, you love to have a little cranberry sauce with your turkey or ham or any other time of year. If you need a super simple, super fast, and super tasty Keto cranberry sauce, look no further. 10 minutes prep and about 20 minutes cook time and you’re in business!

Ingredients:

  • 12 oz. fresh cranberries
  • 1 cup Keto approved sweetener
    • I’m starting to lean towards allulose more than the other sweeteners. It’s much easier on the tummy. I order on Amazon in a 2 pack–> https://amzn.to/3FscXeB
  • 1/4 cup water
  • 2 tbsp. vanilla
  • Cinnamon (measure with your heart)

Instructions:

In a medium sized pot, place your cranberries and 1/4 cup of water. Heat on medium for about 6 minutes till they start to pop. Don’t worry about the water level, it may not cover the cranberries. Just make sure you use 1/4 cup of water, no more, no less.

Once they have popped, reduce the heat and add your sweetener, vanilla and cinnamon and stir until well combined.

Put the lid back on and let simmer until it thickens. You get to decide how thick you want it! Once done, turn off the pot and allow it to cool. Place in a mason jar, bowl or whatever you desire and put in the fridge to solidify. If you want your cranberry sauce the be smooth, you can hit it with an emulsifier before refrigerating. Hope you enjoy!

Keto Avocado Crema

This is the sauce that does it all. We use it as a dressing on salads, topping on tacos and even drizzle it on our eggs. It’s perfect for basically any occasion. Tonight, I made a fresh batch and added to our fish tacos. It was dynamite!

Avocado Crema added to fish tacos

Ingredients:

  • I bundle cilantro finely chopped
  • 1/2 cup sour cream
  • 1/4 cup water
  • Salt/Pepper to taste
  • 3tsp Cayenne (optional)
  • 1 squeezed lime
  • 2 avocados
  • Condiment bottle – If you don’t have one, here is a suggestion from Amazon–> https://amzn.to/35yWPHc

Instructions:

Wash your cilantro and finely chop. This is important if you want to put in to a squeezable container. If you don’t chop it fine enough, it will clog the tip and frustrate the heck out of you.

Even this isn’t chopped fine enough, still clogged my tip

Get your food processor out. Throw in 2 peeled avocados, the cilantro, 1 fresh squeezed lime juice, water and all of your seasonings. Put on blend and let run for 20 to 30 seconds. Remove the lid and give it a scrape down the sides and hit it again for another 15 seconds. If you put some on a spoon and it doesn’t slide off, you can add a bit more water. This will help when using as a dressing. Transfer to a squeezable condiment container or bowl and refrigerate.

The bottle will last about 2 days in the fridge before it starts to brown. If you are proactive and shake daily, you might squeeze another day or 2 out of it. Enjoy!
